I apologise if I’m not very helpful on this since my sense of colour + perspective was gained from subconscious learning from a lot of exposure to media.. I like to stare really hard at admirable art until I feel like I’ve sussed out their sense of colour distribution/perspective..
I think that colour studies wouldn’t differ too much from anatomy or pose studies though - grab a picture with really interesting colour use and recreate it as you would sketching out poses from references! Concert photos, I hear, are really good for this in terms of dynamic colours + lighting! Also, a nice site to go to to see attractive interplay of colours is http://colorschemedesigner.com/!
As for perspective, I suppose sketching over x-point perspective grids is a method to try, though I think it would be easier to ref from photos. But that’s just me! Try studying from films? Looking at high or low angle shots can help, and good cinematography usually has a variety of interesting perspectives :-)
